3 Les Perles de Monte-Carlo are Monaco's signature locally refined oysters, grown and served at an open-air seafood bar located at the tip of the breakwater in Port de Fontvieille. Established in 2011 by marine biologists Brice Cachia and Frédéric Rouxeville, the enterprise uses an eco-friendly process to finish and ripen oysters in the Mediterranean.
The Farming & Refining ProcessStart in Brittany: Oyster larvae arrive from Brittany and spend time growing in a controlled, phytoplankton-fed hatchery.Maturation: They return to Brittany to grow large before coming back to Monaco.Mediterranean Finish: The oysters spend two to three weeks ripening in deep-sea water pumped from 12 meters down in Port de Fontvieille. Flavor Profile: This unique finishing gives the meat a balanced texture and a distinct hint of hazelnut.
