Sometimes when I visit the local chicken shop first thing, the display fridge is empty. I enquire about breasts, thighs and legs. The butcher points at the blood stained wooden block and then glances at the live chickens in the back. Some customers actually choose a specific bird. The meat is still warm when it goes into the pan.
